Our bees forage across the fields, meadows, woodland, parkland and old hedgerows of the Askham Richard and Askham Bryan, just south-west of York. Each harvest captures a particular moment in the landscape, shaped by what is in flower, the weather and the changing seasons.

Small Batch Harvests

Rather than blending the season into a single estate honey, we choose to harvest in small batches throughout the year. From the light blossom and woodland character of spring, through the richer meadow forage of summer to the wildflowers of the field margins later in the season, each harvest develops its own colour, texture and flavour.

Nothing is blended for uniformity. Each harvest is bottled as its own batch, preserving the differences created by place, forage and season.

• Our spring harvest is Field + Forest, followed by;
• Meadow + Park in mid-summer and; 
• Sun + Shadow as the landscape turns towards autumn.

Each Harvest is Different.

Honey is an expression of a particular place at a particular moment.

The plants in flower, the weather and the strength of the colonies change throughout the season. Even within the same landscape, no two harvests are quite the same.

At Jorvik Estate, we keep our harvests separate, allowing the character of spring, summer and late summer to remain distinct.

The first harvest is the most limited. Spring honey depends on colonies becoming strong enough to produce surplus while the early blossom and woodland flowers are still in bloom. Later in the year, the opportunity often narrows again as flowering declines and the bees begin preparing their own stores for winter.

Together, the three harvests record the changing landscape of a single year.

Presented together as three jars, each annual collection captures one season at Jorvik Estate.

Three harvests. One landscape. One year.

Each collection is limited to the honey the bees produce in that season. Once a harvest is gone, it cannot be recreated.
