Jorvik Estate Late-Summer Honey 2026
Appearance
The deepest gold of the season. Warm, luminous and inviting.
A beautifully golden honey, noticeably richer in colour than the earlier harvests. Where Field + Forest developed its distinctive pale, creamy character and Meadow + Park brought a brighter summer gold, Sun + Shadow captures the warmth of late summer.
Its clear, golden appearance gives an immediate impression of the generous sweetness that follows.
Aroma
Warm and inviting, with the familiar character of traditional golden honey. Less about the delicate spring florals of Field + Forest, and more about the rounded sweetness associated with the closing weeks of summer.
Flavour
The sweetest and most traditionally honeyed of our three 2026 harvests.
Sun + Shadow delivers an immediate, generous sweetness with a smooth, rounded flavour.
Unlike the delicate floral freshness of Field + Forest or the subtle citrus character of Meadow + Park, this final harvest has a more familiar, classic honey flavour.
Richly sweet without requiring complicated flavours to define it, Sun + Shadow is wonderfully straightforward in character. Golden, satisfying and unmistakably honey.
Texture
Smooth, fluid and luxurious on the palate.
Sun + Shadow shares some of the beautiful smoothness of Meadow + Park, while offering a fuller impression of sweetness. It is distinctly different from the naturally crystallised, buttery creaminess of the spring harvest.
Finish
A rounded, lingering honey sweetness, with the warm and satisfying character of a traditional late-summer honey.
Of the three harvests, Sun + Shadow leaves the strongest impression of natural sweetness.
Likely Forage Sources
Our final harvest of 2026 reflects the changing landscape around Askham Richard and Askham Bryan, south-west of York.
As summer draws towards autumn, the bees continue to forage across open fields, hedgerows, woodland margins and gardens, wherever late-season flowering plants provide nectar.
The precise composition of each harvest is shaped by the weather, available forage and the changing season. We allow those natural differences to remain.
- Hedgerow and field-margin
- Garden flowers
- White clover
- Bramble
- Thistles, meadow flowers and grasslands

Producer’s Notes
Three harvests. One landscape. Three remarkably different honeys.
Sun + Shadow completes our 2026 collection and is the most golden and sweetest honey we have produced this year.
What makes this particularly interesting is that all three honeys come from the same bees, foraging across the same estate landscape, yet each has developed its own colour, texture and flavour.
Field + Forest is pale, delicate and beautifully creamy. Meadow + Park is golden, silky and subtly citrus-led. Sun + Shadow is the honey of late summer: wonderfully smooth, intensely sweet and full of that familiar golden honey character.
We do not blend our harvests to create a consistent product. Each is bottled separately to preserve its individual character.
Together, they offer a genuine taste of the changing seasons in one North Yorkshire landscape.
Three harvests. One landscape. One year.
